the San Francisco Chronicle has an article about 10 techniques every cook should know with video instructions.  

The one about getting pie dough into a pie pan is brilliant, and I am thinking of making some sort of pie just so I can try it out.  

I am also going to make Steven watch the one about segmenting citrus and folding even though he will still do it his way, and, considering he cooks great tasting food all the time, I shouldn't complain about how he gets it done.
