watch out, Popeye
Probably because of the hot weather we had a couple weeks ago, the spinach and arugula season was short this year! (if you don't know and were wondering- spinach and arugula and most crops where you eat the leaves are only good until they bolt, or flower and go to seed. Once that happens the leaves become tough and sometimes bitter and the plant's productive time is through.)
It was starting to bolt so we picked all the spinach yesterday and now I am trying to figure out what to do with it, all 5 pounds of it!
I made creamed spinach and we had it with dinner last night and again with eggs this morning for breakfast, but I have still have 3 pounds left to use!
Any suggestions?

one of my fav summer salads is spinach, strawberries, swiss & champagne vinaigrette. So good. I'm also pretty crazy about spinach & feta quesadillas.
I love spinach. Creamed spinach sounds amazing! If I had three pounds I would probably make a pesto or maybe but it in a soup.
Holy cow that is a lot of spinach! My mom makes a delicious home made spinach pie with Italian sausage. I'm sure it would use up the rest of the spinach and it freezes well.
Yes, salad and on pizza! I didn't know about the shelf-life of spinach, so thanks for the information!
what a lovely sinach! you can make some spinach soup or fresh spinach salad. i love also spinach and feta muffins, yumm!

what a gorgeous bundle of spinach! we eat almost everything with spinach, sandwiches, soups, quiches... yum!
