easy being green


Unlike most of the dishes I post, this is a really simple and easy one, and it's still delicious: spaghetti with pesto, green beans and tomatoes

If for some reason you don't have oodles of pesto already made, here's the recipe:

2 packed cups of basil
1/2 cup olive oil
1/4 cup pine nuts (lightly toasted)
2 cloves garlic
1/4 cup finely grated Pecorino Romano
1/4 cup finely grated Parmesan

Put everything but the cheese in a food processor and chop, then add the cheese and mix it together.
You can store it in the fridge for a few weeks, or leave out the cheese, freeze, and then add it after you thaw it out.

Now on to the pasta:

Boil salted water (Steven likes to say it should taste like the sea) and throw in your spaghetti.  About 4 minutes before the pasta is done throw the beans in the pot the same pot.

Stain the pasta and beans, reserving a the water.

Add the pesto to the pasta along with a few tablespoons of the reserved water and a tablespoon of butter.  Mix thoroughly, plate, and top with a few tomatoes and that's it!   

It's fast, easy and yummy! The perfect dinner after a long day.

Why is pesto so very heavenly? My roommate and I will make a bit container of it and then munch on it all week. We put it on pasta, bread...really, anything we think it's work on.
