Yesterday, for New Years Day brunch, I made everyone a little breakfast sandwich. A creamed spinach and fried egg on a freshly baked popover breakfast sandwich, that is.
If you're anywhere near sea level I recommend Julia Child's popover recipe, but since we're still on vacation up at 8200 feet, I used this high altitude version and it worked well.
I'd forgotten how much I like creamed spinach (recipe here). It's delicious, and the mix of the textures of the crispy popover, spinach and the egg was great.
It's important to start the New Year off with a good breakfast.
(I'm thinking of being more organized with my food blogging. maybe a once a week run down of good eats? Haven't figured it out yet, but you'll be the first to know when I do.)

Oh wow that looks so yummy I wish to lick the computer screen! Spinich is my favourite vergetable ever (closely followed by parsnips and sweet potato - I have a sweet tooth!) I must try out that recipe!
I'm going to have to try that recipe! I've been on a real vegetable kick lately. I roasted red kale with cumin and fennel seeds last night and it was deee-li-cious.
popovers. yum. one of my favorite restaurants serves them instead of bread at the beginning of the meal. must remember to add popovers to my list of recipes to try in 2010.
